If you like anime stories and characters, you can play untold 1 or 2 story mode. I would recommend starting with 4, as it is on the easier side, for a Etrian game, and you can make your own party and rock (you can also make your own parties in untold 1 and 2)
3 is also really good, but I would do a bit of research when making your party

It's really up to you. The Untold games tend to have one big dungeon of several floors as opposed to EOIV which has several dungeons of a smaller number of floors. Other than Untold's ability to run with a 'pre-rolled' party in story mode, that's the only major differences off hand.
IV and Untold 2 also have demos, so they're worth looking into. Persona Q is also worth seeing if you're a Persona fan since it's basically a Persona game in the EO engine.

Story mode.
The gameplay is exactly the same, your party composition is just limited to the story mode characters.
Story mode has actually more content, an extra dungeon and a whole new strata, unique equipment, and unlocks new classes in the classic mode if you clear the story mode first.Although I honestly didn't bother with it and just moved to EOU2. The UI improvements alone make it worth.

The original EO1 is a broken mess that you can't win unless you have a VERY specific setup.
EO2 is a billion times better, and has a lot of much needed fixesRonin became broken as hellllllll
EO3 is considered the pinnacle of the series but is HILARIOUSLY unbalanced with the introduction of subclasses, to the point that you can break the entire game over your knee once you beat the second major boss.
4 is an excellent entry to the series, and has one of the better stories for the series, despite marginally being a noplot series.
EOU1 is the best you're gonna get out of the original game's experience.
EoU2 is the most polished and actually has an entirely different dungeon layout than the original, along with shitloads of fixes, including Ronin going from an absolute monster to a perfect balance between the really shitty EO1 version and the EO2 version, and beast going for waste of space to the generally seen best tank class of the series.
EO5 is coming out, and the four races are a little polarizing to some people, but the classes all look amazing.

You can play Classic Mode, it's basically the same game.
Apart from updated OST and UI, I think they changed some of the balance, not sure how much.
Immunize was broken as hell
I never bothered with Story Mode since it was too streamlined for me.
EOU2 apparently is a much better remake but I didn't play it yet.

Ennemy looked better in 2D. Some 3D model are close enought or equal but it's pretty rare. A load of monsters look goofy and some 3D model are just lacking in details. Granted, I only played the beginning of U1 and I'm at the very end of IV second stratum but that was my impression. Also, orange ball were more scary since you didn't knew what the foe was until you fought it.
Hell, just compare the bear FOE, it's pretty sad.

This thread convinces me I might like to start the series with EO2U for the improvements made over the first + an ok story (not too huge on plotless games).
