Actually, I'm pretty sure the idea is to preserve the light hearted cartoonish image Mario's embraced in his 2D days.
Sunshine and Galaxy have some disturbing deaths or ways of Mario dying. Like him disintegrating when touching Dark Matter or his drown animation in the poison swamp. They just wanna do it in an entertaining and cartoonish way.
The only reason why he dies in a simplified manner for 3D Land+World is because they want to fit the flow of 2D Mario where Mario and crew only die by falling off screen.
