I think that's actually a very misattributed distinction. Lots of recent Nintendo games get some lower review scores because of their difficulty now. That's not to say that Nintendo's games have gotten harder. But the standard has actually dropped so much for other games especially in the AAA space that Nintendo's games actually are now more challenging by comparison.
I think there's a double standard going on that because Nintendo games are brightly coloured it's assumed they're easy and because AAA gmes are gritty people assume they're "hardcore" even when they're not(Ass Creed, Batman, GTA, Witcher 3, etc.).

Nintendo has always marketed towards kids, ALWAYS. They started marketing some IPs towards older fans sure, but the core audience for anything E-E10 has been kids.
2007-2010 they started marketing to older fans more, We got things like Metroid prime and Twilight princess, grittier less child friendly nintendo games. They tried to expand, and obviously it worked.
Now, Nintendo doesnt see the reason to profit top its older fans anymore, and just the younger. Nintendo wants the child audience, but the problem is the child audience aren;t the buyers, Kids have an inferiority complex at that age, Nintendo is purposely marketing itself now as the "Kiddie console" what kid wants to buy the baby console when they can buy the new PS4 and XBOX ONE like all the cool kids and the adults? Friends tease them for having baby toys, of course they'd want to change that, its peer pressure.
Adult fans of nintendo are the main market, but they're no longer being catered to, which is causing this hysteria.
