They're only a challenge because of the camera and their size. You should probably just run or sneak by them.

It's pretty dumb how they recover from the fire stun but are still immune from being stunned again for a few seconds.
If you mistime your attacks you'll get fucked up and there's no good way to tell when they can be stunned again.

Firebomb, or cheese it with a bow.. They are an optional challenge and drop Titanite shards which are nice to get early on a second playthrough.
