No. Boss fights is the only good thing about the game. Nobody remembers that one time you had to escort some Doman kids and tell them what adventuring is like. But everybody remembers when Bahamut was Teraflaring their ass.
MSQ in XIV gets a lot of praise but it's really a pretty basic story that you have ZERO agency in put onto dozens of hours of "Go from A to B and interact with thing" quests. At that point just make it one big cutscene, fuck, and stop wasting my time.
I know a lot of people complain about "difficult" instances and with how generally inept XIV players are, yes, it could be difficult, but they're really the only interesting, cool and challenging part about this game.

3.0 MSQ is significantly shorter than both vanilla ARR and 2.x. You're just remembering doing all the sidequests at launch, but exp payouts are far greater now so you don't have to bother. CT gives exp now, beast tribes didn't exist back then, HW dungeons all give 2x the exp they used to, etc. Getting from Before the Dawn to the end of 3.0 is a breeze.

To add onto this because I'm tired as fuck and forgot. Horizontal progression basically provides alternate means to obtain items of the same value/strength. In XIV currently, you have raids or tomes, and even those aren't truly horizontal. Savage raid stuff trumps tome stuff trumps NM raid stuff.
Diadem was almost close, but it was horribly grindy, boring, and the sheer RNG of stat rolls made stuff either shit all over raid gear or be laughably bad. To top it all off, it encouraged 3.2's whole "stats don't matter, if shit's a higher ilvl it's better."

The only timed node from that level that comes to mind is darksteel ore, because it's required to craft adamantite nuggets. rose gold nuggets are also still used to a degree. Sort of.
Also do 5 AM Grade 3 Thanalan Topsoil every in game day (Western Thanalan node 8). People use that for gardening.
Otherwise I'd just check the prices and supply of the easily accessible materials you can gather and go for them. You could also put your daily map allowance to use and dig up the most valuable 1-50 map on your server.

Yeah I think that it's perfectly fine to go into most of the content blind. As long as the other players have a heads up they can work around you, most of the content in the game is easy as fuck to do anyway. As long as you're doing your role properly (Healer is healing, dps is dpsing, tank keeps aggro) the overall party should be fine.
The only problem really comes in with ex primals and the harder raid tier, in which you can very easily cause the party to wipe with a simple failed mechanics on your part. If you don't know the fight or mechanics people are probably gonna try to explain them to you, so at that point you might as well watch or read a guide anyway.

Do your main quest until you can't. Then do some sidequests and dungeons. Then do more mainquest.
You'll hit a spot in the late 40s where you'll need to grind somewhat if all you've been doing are the story quests.

Your priority for levelling is
MSQ > Daily low level queue > FATES
MSQ should carry you most of the way, and it will make you do dungeons multiple time. Do the other 2 if you run out of MSQs
What about duty finder?
That's the mechanism that lets you avoid talking to people when the game forces you to do dungeons/
