I mostly forget useable items. But I got around and changed that mentality eventually and actually use good weapons in Fire Emblem now. Instead of trying to fight everything with iron and steel weapons.

But how can I be sure that Bethesda didn't prepare some sort of underwater temple that requires you to have Potion of Waterbreathing. I can't just toss them away like that.

As someone who does this I'll explain my reasoning:
To me using items like that feels like cheating. If I'm not able to beat a fight without them I have this inate fear that I'm just cheating myself because I was not actually prepared for the fight, so I shouldn't be able to beat it. But those items make it so I can beat it. So I don't use them and continue not to until the end where I think to myself, "Man those probably actually would have been useful." But I continue never using them and just repeat the cycle.
