Mumble has better privacy and needs a server to be able to run. However the quality is better, and it is FOSS.
Discord doesn't need a server, can run in a browser, but has poor privacy thanks to being proprietary.
For your typical gamer, Discord is clearly a better choice due to being easy to use without the need to buy a Raspberry Pi or use public mumble servers. Most people don't give a fuck about quality on a voice chat application as long as you don't sound like a robot, they don't care about privacy either. Plus, Discord has a nicer UI which is probably why people want to use it over Ventrilo or TeamSpeak. It's Skype without Microshit advertised towards gaming.

Personally I hate the interface of Discord, it's far less intuitive than a decade old Ventrilo server which is quite astounding. You have text channels separated from the voice channels for some reason and you can't link them together. It's just dumb.
Being free and all that jazz is of course a big plus, but anyone who can afford 2 bucks a month for a mumble server is far better off using that in my opinion.

Are you sure you understand why people don't switch to Discord? Not to make it sound like Discord is actual shit, since like you mentioned earlier, it definitely runs better than Skype & while Discord definitely works better as a program video really is a big reason people don't switch due to it's convenience, privacy & how it can be used for anything, not just games. It's not me that should set an example, it's Discord really should've set an example on how it's for everyone and not just gamers by focusing on video from the start (or at least near it) and not on these smaller features that just gamers want like detecting what game you're playing on Steam or Twitch related content. Sure it's definitely a nice little feature to some but it should've been added after their team really buckled down and got video working.
