MGS2, ToS and GTA IV plats.
Well I have all the trophies for all of the MGS games so I would say MGS2 and maybe 4 are the hardest. Getting all the dog tags and doing the VR missions in 2 is a pain and sooo fucking time consuming but they were all fun to get.
I have stuff like WipEout HD and 2048 but they never felt hard to me. One I consider my hardest one (in a way) would be Deception IV Nightmare Princess.
Only platinum I gave up on recently for being "too hard" would be NecroDancer though. Heck, no one even has it. Both tracking sites and PSN are showing 0.0%

It is not much and i usually only go for plats if they are somewhat eas/ don't take too mcuh time or if i really like the game.
BL: TPS was the hardest one simply because it was a patience test against the NRG.
I am close too game the Sleeping Dogs platinum but that game is too terrible.
