In most jap media/mythos slimes are a core that contains their heart and brain, surrounded by gel. They get bigger as they amass strength.
In western mythos, slimes are usually gobs of gel without a core that are less sentient more animalistic beings, usually with gel made of acid that devours whatever sets foot in it.
Basically, jap slimes have a brain and can think, western slimes eat and devour.
