The difference isn't that there wasn't moeshit shows, but that even the serious fantasy/sci-fi shows are infested with moeshit tropes like the air headed nice girl, the emotionless girl, the tsundere. All to appeal to otaku shits. And the male characters will have some of their own tropes too. Where as shows in the 80s were not so completely saturated with these things on the same scale, but it's not to say they didn't also have the same things at times and some shows were just as bad.
Like compare Gargantia and the original gundam. Amuro is more believable as an actual human compared to the other kid, who is an animu caricature. That said I enjoyed both shows, and gargantia had better animation(even though I prefer hand drawn) and also wasn't nearly as bad as some other shows in the anime-caricature-characters department. The girl had some personality even if it was a cliche one.
