I recently felt like making a new RPG character and was leaning toward Skyrim rather than Morrowind because I had replayed Morrowind more recently.
Plan was a character in light armour who snuck around and punched everyone to death. Turns out I forgot Skyrim doesn't have an unarmed skill. Decided to go for Daggers instead only to discover Skyrim also does not differentiate between different one handers so daggers are the same skill as swords.
Back to Morrowind I suppose. Alternatively Oblivion, but I can't remember what skills that has and the level up system in that game was objectively aids.

Well it's rather the other way round.
The way enemy lvl scaling works can fuck up your game.
Let's say you use athletics, security, acrobatics, speech craft and smithing as main skills. Advancing them will boost your levels, but won't help you fight enemies one bit. So enemies grow stronger while your combat stats don't.
This is an exaggerated example but ylu get the gist. Always try to level blocking/armor and you main magic/weapin skill

Mine was also a house in Balmora although I forget the name. I think it was just someone unimportant that I killed desu. Balmora was kind of the Whiterun of Morrowind. Easy to get to and easy to get around, with whatever goods and services you needed nearby. Dunmer lore is decidedly more fun than Breton lore, but then Dunmer lore is more fun than any other lore. I wouldn't say I'm a minmaxer but I love Bretons because they're magical without being as one-dimensional as Altmer. They're really not at all unlike Dunmer in terms of being versatile and well-rounded.
