Sales, as simple as that, it's to encourage early adopters to get the game at full price in comparison to something like a steam sale. Originally, the chaos slant was pretty shitty, as it was a pre-order bonus exclusively, but the one-week buff and the amount CA has been showing the game does a lot to negate that. Sure, it sucks to pay more money, but it's CA's way of accounting for sales and really is not that shitty, since the faction is still in the game and just not playable if you don't have the DLC.

Of course things are not so one-sided all the time: they've got a religion, mainly revolving around their twin gods, gork, representing the cunningly brutal aspects of greenskins' nature, and mork, reflecting the brutally cunning ones; the shamans who will speak for these gods may influence the greenskins or even whole waaaaghs to act differently.
At times there're greenskins more intelligent and prone to planning and being visionary, or having been in contact with more developed societies enough to have specialized tendencies: orcs mercenaries are rare but possible while the infamous black orcs have a more grim and serious vision of war, weaponcrafting and close combat.

It should be noted, Warhammer is a bit of an in between strategy and 'grand strategy'. There's a lot more base stuff with warhammer, largely the tactics part with armies. But people just like to outmaneuver and outplay others on a grand scale, massive armies, running countries, fighting enemies. It's cool to bring the full brunt of your forces around and control things on such a massive scale.

The spirit in the crown happens to be a part of Nagash, an extremely powerful necromancer, which is why Azhag gets to cast lore of magic spells. They didn't combine that effectively either, for the most part, since the crown constantly struggled with Azhag for control. Azhag just wanted to fight shit and the crown tried to direct Azhag southwards to where Nagash was. This infighting led to Azhag's defeat, eventually, since when the crown and Azhag fought each other they couldn't effectively defend themselves, and this happened in the middle of a battle and let an Empire commander kill Azhag.
