I've watched every stream and that's well over 10 hours of gameplay from every faction. Loading times are lightning fast, turn times are almost non-existant, and I haven't seen any major bug yet. It also perfoms better than Attila, and that's always a welcome sight.
I'm mostly worried about balancing and how the lategame will be with the Chaos invasion.

yep on easy-medium difficults.

Depends on what difficulty you play on. The game is basically line formations of infantry crushing into line formations of infantry and using cav to flank.
It's honestly really simple as far as micro. The most micro intensive thing you can do is recharge cav, or kiting with archers if you really want.
This game looks to have some units with magic that might have some unique micro mechanics, though.

This game gives me an erection. It's been years and YEARS since I played an RTS of any kind. Shogun 2 in early 2013 was the last one so for me; it'll feel like a new genre. A new experience.

Beastmen are Chaos worshippers and often do sometimes fit into larger Chaos forces, but they are separate army lists and Total Warhammer represents this.
There are no beastmen in the Warriors of Chaos Army(or Daemons for that matter, which are also a seperate army. Though at least one greater demon has been confirmed, probably as a quest boss or something.)
The Legendary lord you are thinking of is Kholek Suneater. He is a Dragon Ogre, Dragon Ogres are ancient fucked up sort of dragon centaurs. They are older than humans.
Beastmen are mutated humans, and while Dragon Ogres generally serve as elite shock troops for really large Chaos incursions and otherwise sleep; Beastmen run around raping and burning and shitting on everything.
Their culture is specifically about destroying anything from civilization, be it a windmill down to the smallest plate. For their origins are those as children discarded from society for their mutations.
You are later referring to AoS lore. Which has a loose thread to Warhammer Fantasy but are otherwise entirely different settings.
Skaven have always been very important and the Great Horned Rat has thus been very powerful, although seperate from other Chaos deities. Slaanesh has gone nowhere.
