What is this shit real film doesn't have that pronounced grain unless you zoom in. However copies for movie theaters had lot of dirt and shit and that might make it look like they were very "grainy" but in reality ORIGINAL FILM COPIES were not that bad.
These issues are more pronounced when they did a tape copy from the original film and that gives you the feeling of having lot of grain because of shitty analog film to tape process was there.
I'm pretty sure they have added some extra grain in final grade after rescanning the originals for dvd/hd remasters.

NOPE proper Arri film cameras were top notch back then. Think about Nicon film cameras but shooting 35mm or 70mm film. This is just a misconception because of VHS/Beta tape formats were popular back then and sometimes they were made from 3rd generation film copy transferred to tape.
Film photography and cinematography has been pristine quality for tens and tens of years.
