The Warlords Battlecry series has minotaurs as a playable race. They are sorta half-way between Barbarians and Orcs. If they get their Hero units and have time to build up they are almost unstoppable.

Grimrock/Grimrock 2. Minotaurs had a really cool ability that gave them extra attack power when they collected skulls and put them in their inventory.
