Do we really need film and art critics? However, videogaming is the one medium where I don't mind it, because there is often a trend towards consensus (not actual, objective consensus, just a trend) that allows for recommendations to be useful. An unwieldy camera system is going to piss off a lot of people, chances are myself included.
That said, I think most journalists are shit. I don't say this to be a contrarian douche or swing my e-peen around, it's just that most reviewers kind of suck at games. That Polygon Doom fiasco is one in a sea of thousands. I'll watch a kart racing review and notice that the reviewer is always trailing in the mid pack. At the end of the day, how they feel about the game won't be too relevant to me, because I'm going to have an inherently different experience with the game than they do. The game will be less difficult for me to play. I don't really read reviews any more, but if I did, I'd try to keep an eye out for reviewers who were a lot like myself. Jeremy Parish used to be on 1Up.com and I'd listen to his opinion because he had a genuine, lifelong interest in gaming -- he'd mention importing Symphony of the Night as a kid to play on his PS1.

I reloaded against the first knight to practice parrying and got pretty done with the game. Finished through Capra Demon, got to Gaping, got tossed back like 100ft. off a ledge (probably a glitch).. figured I was exploring more than I was actually engaged with anything, so I quit. Do you read a lot of art, film, music, or literary criticism? Because the same thing you are talking about with video games is very much there in all of those fields. There are particular formal, stylistic, and content based information that critics lean towards, no matter the field. I'm having a hard time believing you've given every other medium a fair chance as a result of your position that as a result of a criticism being subjective, it is thus pointless.

Essentially, I only use criticism to find someone who shares my own personal set of preferences, and use their recommendations to help save me time and money. For example, there is "difficulty" and then "punishment". Those things are often confused.
Difficulty is an enemy where you level of proficiency must be of a high level, in order to avoid getting hit. Punishment is getting one-shot.
If you're playing an RPG, where you levels up your HP highly, then you are able to survive an attack that may one shot another player. Therefore, you might think you're playing better, because you beat the enemy on your first try, despite having gotten hit once.
Where you might think someone else is playing worse, because they died in one hit, due to low HP.
You both played with the same level of skill, but because the enemy was more punishing to him, he ended up dying.
And then you get the luxury of shouting "git gud" at him.

2. Something doesn't necessarily need to be broken, in order to be a flaw. You have develop a working feature that is unrealistically difficult for most players. If 99% of your player base falls into a trap, then is that a sign of an effective trap? Or is that a sign of unreasonable expectations?
Knowledge can often cover for flawed design. Because by failing and learning the solution, you can tell yourself it's fair, since you figured it out. And you may think it's fair, because you can easily replicate the solution. However, the solution may never address the flaw that made you fail initially.
