Not only was it more convenient but it really helped sell the angle that bonfires were a bastion of safety and comfort for undead.
Demon's and Bloodborne benefited from the "single safe haven" angle, especially considering the direction they took with the hostile world and only one place where you could find sanctuary, but Dark Souls worked better with the bonfire system.
