Apparently my copy of Windows 7 is exempt from Windows 10 upgrades. I've downloaded every single Windows update every month and I still have never received a single message in the form of a pop-up or on my task bar stating I should upgrade to Windows 10. I have Windows 7 Professional with a key provided by my college years ago. I noticed after activating Windows to become genuine the product key apparently stops existing in any form on the system even though it stays genuine. I apparently got a gimped version of W7 that ended up being a blessing instead.

No, fuck no. Quite a few games are getting linux versions these days but the selection is still small, and the performance in linux is shit compared to windows. Also, drivers in linux are pretty bad both for Nvidia and AMD, because it's obviously not a big priority for them. No, far from it. AAA releases are few and far between. But most old games work with Wine, and all the console emulators are also on Linux.
Performance is worse than DirectX in Windows, and that's with nvidia and closed source drivers, AMD GPUs are even worse.
It's really not a gaming platform, and that probably won't change soon. Steam for linux is several years old now and hasn't gained more than 1% market share.

Apparently I had somehow opted in to send Microsoft "anonymous" data for them, and it was eating up my ram something fierce. It stopped when I clicked out of it in the control panel.

Windows 7 does everything I need it to do. Windows 10 adds no features I appreciate, changes things I don't want changed, is less compatible with the software I use and has the botnet stuff on top of it.
There are plenty of reasons beyond privacy concerns for not using Windows 10. The reality is that Windows 10 is unnecessary and we'd all stay on 7 forever if it was updated forever.

Anyways, the issue here is this cult of privacy that has formed. To them, privacy is sacred even though they've given it up willingly like you've said a million times over. That being said, I think the issue more so than anything else is that unlike your Steam behavior or Phone, there might be some pretty borderline incriminating shit on people's computers. We, the computer literate, probably have some sort of pirated shit, freaky pornography that could be interpreted as illegal, and a million other things that could ruin our lives if someone just decided to press the mutant-finder button and find everyone. I'm not saying that anybody has the resources to catch everyone, even the government, but people have been locked away for decades for petty minor shit just because some lawmaker wanted to make a name for themselves.
A part of me feels that if someone truly had good reason to suspect I'm a terrorist, they're more than welcome to kick down my door with a warrant produced from my monitored Internet traffic. My issue with that is that is only justifiable in a non-corrupt system; and the system is certainly corrupt.
I mean, could you imagine if pirated media became a red flag because the media industries decided to pay millions of dollars to actually track down copyright infringement? Then it would just be so easy to plant illegal shit on people's computers knowing that the sheer fact it's on there is enough to have a meeting with the police - even if nothing happens that's pretty inconvenient.
