Honestly the toughest fight in any of the souls games (bloodbourne included) was easily dark stalker from DS2. That mother fucker was such a pain in the ass, probably got more enjoyment out of that single victory than I did ever getting to max level in any of the covenants in any of the games.

Soul of Cinder or Nameless King

Soul of Cinder because there is so much variety in his fight and I've found him to be pretty difficult on all my playthroughs so far. Nameless King because of lore and the overall spectacle of it.
