First two Thief games. The first three Splinter Cell games are a close second. I'm not picking "the one" out of those, I'd be equally happy playing any of them.
Everything else is nowhere near their tier.

For the second favorite, it's hard to decide between Metal Gear Solid and Tenchu. Metal Gear Solid is the mechanically superior game. The depth of the boss fights is insane on extreme. I really like the atmosphere of Tenchu though, although MGS has a pretty good atmosphere too. Tenchu also profits from its better camera angle. Metal Gear Solid is hurt by it's retarded alert system. "Kojima, what should happen when the player gets spotted?"

Hitman 6 might surpass it, assuming it keeps the level of quality it has going, but as of now it's Blood Money.
Other classics include Contracts, Thief 1 and 2, Splinter Cell, Pandora Tomorrow and Chaos Theory, Metal Gear Solid 1, 3 and V, Dishonored and Mark of the Ninja.

I respect your opinion. I think Blood Money is the best but Contracts certainly has it's strong elements over Blood Money, such as the difficulty, for one.
