Technically Thief 1 and 2. 2 made the controls better and put more stuff on the map to add more detail, but it got terrible reviews at release for being a $60 expansion pack, despite how major the changes were.

Modern Warfare
Every Tomb Raider PS1 game (1 and 4 are tied for the best,with 3 slightly below and 2/5 tied for worst)
They're very incremental games, each only adding one/two new mechanics and just letting you explore more spooky tombs and kill more endangered species.
Time to get this started.
