I only ever fought 2 at once and that was on the bridge and I didn't die then. Just block and roll and attack when there's an opening.
Other than that just rush them when they're alone or aggro them with arrows or something.
Enemies like the cathedral knights at king's garden or the prison wardens are more annoying than these crow guys.

What program do you record with? Does it not lower your FPS and fill your HDD with uncompressed shit?

You only block that which you fail or can't dodge.
If you have a shield then you should at least have one with a minimum of 50 stability (and there are several of them all through out the game, even medium sized ones).
You should also know when to drop your guard so you can regenerate up the stamina in between dodges and hits.
The chloranthy ring also helps.

Playing a medium weight build with a shield and a single handed weapon (and switching to 2-handing it) is simply the most versatile and effective build. That along with carrying a bow.
I do however focus on dodging most attacks.
If you think you're more hardcore for not using a shield but you keep dying more then you're the idiot here.
I pretty much never ever died in DS3. Heck the only bosses that killed me and I had to retry was Dancer, Nameless King and Aldritch (but that was intentional since I remembered mid fight that if I killed Aldritch I would miss out on a questchain).
This kind of build has worked in all the Souls games.
