3 is quite literally Dark Souls 1 running on the Bloodborne engine. At times, many enemies look and act just like BB enemies.
Another thing I don't like about 3 is how linear it is. With each souls game, they've become increasingly linear.
Example: In 3, the only way to sequence break is to kill the Dancer first. This can be quite difficult at such a low level. EVEN after beating her and going through Lothric Castle, you can't enter the Archives until you've beaten 3 lords of cinder, thereby forcing you to play on the intended path.

The game is slow and clunky, everything from the character movement to iframes felt like shit til you got 99 adaptability. there's not a single good fucking area in the game. Every single fucking area was mediocre at best, and Lost Izalith pre patch levels of shit for most. 360 tracking on 99% of the enemies, the worst hiboxes in the series, the worst boss fights in the series (no fucking Ivory King and Fume don't magically make up for the rest).NPC Invaders cheat, like literally cheat, not just infinite poise/hp trash, but toggle out of animations in ways the player can't. World design is absolute ass, all the areas play like absolute shit, instead of settling for just looking like shit. NPCs are all generic and forgettable with less personality than giant humanoid boss with weapon #324. It's really weird.
Some weapons have guard+R1 on their left handed moveset which is really lackluster and some have half-decent movesets of their own when put in the left hand.
Rapier has R1+Parry, as does the monoscim.
Dagger and Handmaid's Dagger have reversed grip when used lefthanded.
Dual wielding in DaS3 is really kind of shit in that way because it shows off that they almost had the right idea even if they didn't bring back powerstance.
At least you can twohand offhand weapons even though there's no difference between the movesets.

It's a multi-enemy boss fight where occasionally an enemy will spawn that will aggro the other boss enemies. The main boss entity can sometimes completely ignore you and fight his friends.
I loved that Dark 3 had more enemy infighting. Bloodborne's DLC was really interesting that way, though it only happened in one area.

My biggest complaint with DS3 is it didn't take enough from DS2. I was massively disappointed by DS2 overall but there were lots of little things they did that I loved like what you listed. The only things they carried over were the streamlined upgrading system and dual wielding (while reworking it so it's tied to specific weapons and we don't even have a dual wielding weapon for every weapon type).
I still think DS3 is the best souls but all those little adjustments could have made it that much better.

Then in his failure he offers to challenge you in farrons keep, retreating to the familiar environment, giving a distinct wolfblood grass to andre as a note, and here he can battle you to become a "true dragon", if he wins, he keeps the dragon stones, and when you return, he will mention being the true dragon, but when he loses he will commend you.

I don't get that at all, heavy weapon builds are now a headache for both pve and pvp I switched recently and my god I wasted my time trying to use great weapons instead of normal or Dex types.

Well for starters my main complaint stems from PVE, not much of a PVP'er myself.
But how do people not find it frustrating when you fight enemies wearing just robes, like the deacons, and you are slamming them with a great axe and their just power on through and use pyromancy, but one smack from an enemy and at best you flinch, worst case, you fly across the room.
I got through the game just fine, I even played new game plus like it, but I eventually switched to the sunlight straight sword and I'm sorry but how is it fair that rushing through with my friend we had no trouble both using that weapon because of the sheer speed and interrupt we could inflict?
The game just isn't very rewarding as a strength player, hyper armour just isn't that great a system I'm sorry.

my friend and I tested this out, the heavier armour reduction is actually negligible, and as I have said before the hyper armour is actually not that great, there's plenty of room for interrupt, so overall, its faster and more damaging to use lighter weapons and as long as you wear some armour its usually fine for damage.

The best ones are the pyromancer and I guess Yorshka cuz she asks you a funny question. Patches in onion armor is pretty good and Hawkwood is alright, but ultimately the dark souls 1 references are the best while being inferior and Andre is horrible.

Two examples off the top of my head:
1)How the fuck are you supposed to know not-Siegmeyer is trapped in the well outside of the cathedral? It's random as fuck, and you'd have to stumble upon him by accident in most cases
2)How are you supposed to even know that patches would rescue Greirat, but only as long as you don't buy the catarina armor from him? I first met him at firelink, where he was wearing his normal clothes. Furthermore, buying the armor set from Patches, but not giving it to onion guy (because he's in a random well) also gets Greirat killed

It is a problem, but not the problem you imagine. Everyone was gimped in Dark Souls 1 to ensure the maximum amount of interaction. You used only limited resources to make characters.
Since Dark Souls 2 works independent of soul level, once you reach the last tier of soul memory you can be matched up with anyone of any level. Or in other words rather than going for a limited build you could just pump every stat to 99 and use every item.
It made it possible to stop thinking about the mechanics since you wouldn't accidentally break from the "community" and lose connectivity, but at the expense of making it more difficult to match up with people of a similar level or progress through the game. It treats PVP like something strictly for endgame characters which made them all pretty much the same character.

hawkwood does 2 things:
- drop his actually useless shield
- attack you if you do the last bosses a certain way
his dialogue is less varied and interesting than 1 crestfallen's, and even in 2 they made their crestfallen a useful character for hints while also making him a covenanter.

There are two people who can save greirat. Also there is nothing wrong with him dying. That is also an outcome.
Litterally that one part has 3 different outcomes.
