All the AI's keep making their influence spheres larger without colonizing planets or building frontier outposts. How the fuck do I do the same?
As a result I have is a patchwork of planets that will never connect like this, the basic sphere of a planet never grows no matter what I research. If I try to bridge them with frontier outposts it fucks my influence and leaves me unable to replace dead leaders.
Of which I can only have 10. I can't find a way to increase the number either which is absurd.

There are some techs that increase your border size.
2 normal ones that increase it by 20% each. And one repeatable end game tech that increases it 10% each time.
They are incredibly powerful as seen in your case.
There's also a another endgame tech that increase the number of core planets.
You can have more than that but you have to put them in a sector.
Press F2, Z and in the corner you should have a create sector button.
That puts the system in the control of an AI who at the moment is kinda broken so only give it fully developed worlds so it doesn't fuck it up.
I really want a mod mode DLC that let's us have "demographic wars".

There's only two habitability techs, which at the end of the day only increase it by 10% which won't be enough.
Later you'll get terraforming and if you have the right resources you can terraform it to a better planet.
Thing is that Terraforming takes 10 years during which the pops on the planet have a -100% happiness modifier.
As for te striped territory it means that another empire or race controls a planet there. It must be primitives I guess. You can build an observation station there for some extra research points and if your policies allow it help them become a real empire and your vassal.

I found a super early on mushroom civ on a planet, built an obs post and eventually something happened that caused the mushrooms to start worshiping us as sky gods. We were revered as a god by one tribe who then committed religious genocide against the other tribes. Then they built a pyramid in our honor. It's been about 90 years and they still haven't done anything. The dead tribes land hasn't been taken over - they still have abandoned farms. They've also built a 2nd pyramid. It's pretty funny but kind of creepy.
They should add some option for trading food between your planets or even with other empires... Maybe some of them are poison to them and they declare war on you because they died because of your food.

When you create a race, you get to choose between an engine type. Hyperspace is one of them, and works like you say. The other 2 aren't restricted to hyperlanes, but can eventually research to display hyperlanes for strategic purposes against those who do use them.

You can mouseover the happiness to find out why. If the habitability of the planet is low, your happiness is capped. 1% habitability = 1% maximum happiness.
You can employ a governor (2% happiness per level), issue the happiness edict, change some empire policies, issue the reeducation edict to change their ethos, or build the happiness buildings.

Against AI i would research everything equally and not specialize. Just update your warships to the latest designs and you'll be fine. A mix is always better than pure dedication, because if someone bad declares against you, you'll lose 8k against 16k and so on. Try to balance it out unless you are sure you can gain any advantage by specializing.

I just can't enjoy this game. I can see the potential in it, and creating factions is really fun.
But it needs more content. More traits to differentiate species. More things to do on a planet. More customization, more ship parts and layouts. More diplomatic options. More in depth politics and population modeling. More economic options and maybe even introducing goods. Sadly this. Diplomacy is barebones and pretty much whatever, every race plays exactly the same as you can just freely pick the traits you want and they don't have that much of an impact on the gameplay anyways.
Combat is automated, policies and edicts barely do anything and half the game you can't afford them anyways.
CK2 is interesting because of how the different cultures play out and you can work your way through the ranks by picking some lowlevel lord. The EU games have variety depending on the nation you start out with.
In Stellaris everything is exactly the same with a different fluff icon.

Get some corvette meat shields and equip point defense on them.
They are cheap, easy to replace, can defend your battleship from rockets and sometimes take a huge ass laser or kinetic artillery for your battleships.
Equip defensive AI on them so they don't rush to their deaths.

The thing is that point defense is only usefull for missiles.
Wasting a slot on a battleship for that really cuts into your offensive power and one might not be enough if you are fighting enemies that use a lot of missiles.
Also you are wasting a slot in general if the enemy doesn't use missiles.
Corvettes by that time are next to useless except when used en masse so wasting their slots on PD is almost unnoticeable. And even so you can more easily upgrade a bunch of corvettes than a battleship.

But the game worked and thank god I tried it before buying it. I got bored so fast. I come from playing EU4 but this game... There is literally NOTHING to do. The AI does nothing, you just expand, build more things etc and paint the galaxy with your own colour. You don't face any real challenge anywhere

to offset this you can grant control of star systems to Sectors who manage themselves somewhat, you can go 2 ways with it, either make it so they focus on growth and take nothing from them but the research, or tax them for 75% of what they earn and then when your Energy/Minerals get High/Capped go into the sector interface and feed them creds n minerals to grow them, this saves you having to piss around with the % and the game notifies you when your resources are capped

Destroyers serve the same kind of purpose. Personally I outfit my battleships and cruisers similarly with long range energy weapons and heavy shields/armour so they are extremely capable of fighting. My destroyers and corvettes are fitted with torpedo weapons and have pretty good evasion and decent defense. The destroyers and corvettes serve primarily as cannon fodder while cruisers and battleships make up for the core of the fleet. I build the cruisers and battleships at specialized spaceports which have extra bonuses for the ships while destroyers and corvettes are built wherever my fleet is stationed.
So basically I don't care if I lose destroyers and corvettes, but it's extremely inconvenient if I lose the cruisers or battleships.
I have a ratio going on. A handful of battleships, maybe 2-4, about 6-10 cruisers, 20+ destroyers and 40+ corvettes in a task force. That way it's very rare I lose cruisers or battleships unless I'm literally fighting a serious war of attrition where space fleets are grinded down to nothing.

I got lucky and they split their fleet so I fought only a fourth each time.
I had enough of an army by the time they arrived that I picked away at them and had overwhelming victories with my 35K fleet against multiple successive 20Ks.
I also attacked the vanguard and killed lots of the colony ships and construction ships so they only got 2 planets (from a neighbor)
Eventually I downloaded the mod that lets you remove the infested planets.

early game it takes 1 player fleet looking around your 3-4 planets to effectively destroy your offensive capabilities

I mean tech from crystal entities and roaming stars
roaming stars give you a cloud electricity shot that does 100% damage to enemy shields and destroy enemy destroyers 1 hit
crystal entities give you the toughest hull armor up until tier 3-4, and provide you crystal projectiles weapons (green,red, yello) that do about more/the same as other projectile weapons but without a hard counter
amoebas give you amoeba cruisers, godly if you can get them early game
effectively every xeno tech you get is equal to/ better then early game and mid game weaponry in terms of having no hard counter and great damage
all you need to do is research shields
late game all tech is pretty naff from xenos though, then you upgrade to fallen empire tech

Wormholes are the most fun with the most tactical decision making, hyperlanes are crazy fast especially later on and warp is the slowest but has no actual limitations.
Don't go for Missiles early on, they're the easiest tech to hard-counter.
