Bad examples, GTA3 can be run at 60FPS and is only really troublesome when running off small steps, and I don't remember anything catastrophic at all with GTAVC. In GTASA, on the other hand, all vehicles are fucked, you can't swim and you die by brushing against certain railings.
In Skyrim it's just the Havok physics that are fucked up at uncapped framerates and still, if they're limited at 60 (can't be done ingame though, you need ENB or hardware for it) they're mostly reasonable.
