It's not even particularly good lore, presented in a good way. Almost all of it just vague shit, especially from DS2 and DS3.

I'm not really into all this headcanon stuff, but it's part of the charm. The lore is made this way on purpose.
Some will say that fromsoft are lazy or pretentious (whatever that means) and will just shit on them for trying to do something different, but really, we are still discussing Dark Souls 1 lore to this day, and I think it's much better than just being forgotten after a couple of weeks like most games.

There's no indication that golden scaled armor is the Dragonslayer uniform. If anything, the Dragonslayers wore Silver Knight armor, since Ornstein's armor is just a modified version of that and there's a bunch of Silver Knights with Dragonslayer bows.

das2 is referenced in a vague way while das1 is referenced directly repeatedly. the most direct reference made to das2 is the name of a single character, lucatiel, which is basically a tribute to some of the only quality design in dark souls 2.
miyazaki clearly is not fond of 2 and even enemies that were retained in name (grave warden) were redesigned. the lone element from 2 that escaped redesign is the fucking swamp bugs

Everyone who talks about characters being alive or dead forget that the souls universe is canonically Multiverse and time and space shift all over the goddamn place.
The entire world of Dark Souls 3 just showed up at Lothric's doorstep one day, and Lothric itself used to be on the level of undead settlement before it randomly became a mountain.
For all we know the bosses being alive is just because they came from a world where the chosen undead didn't kill them, possibly some who ragequit the game at Ornstein and Smough.
I mean you can see what may be Nito's coffin randomly in the Gundyr arena and there's at least 3 different versions of Firelink Shrine.
