The heroes summoned need magic from the people that summoned them to survive, and if the summoner cannot provide enough they get nerfed. That's why under Shirou Saber was nerfed to shit, and had trouble using all her abilities.

If you enjoyed the anime, you'll probably enjoy the VN. UBW only covered one route, and while it's my personal favorite, there are still two others that make a complete story.
There's also the 2006 anime to consider, and the upcoming 2017 movies. They both cover different stories from UBW, and while a lot of people hate on the 2006 show, I really don't think it's bad, it's just much lower budget.

If I really want to be generous, I'll argue that the first 15 minutes of the movie aren't bad. Up until the end of the first Berserker fight, I think it works well. It's tight and fast paced, but that main title sequence is flashy, and flows well into the fight. The energy's kept up.

I don't really see Knight of Honor being much of a counter to GoB. It's a soft check like Lancer's Protection from Arrows that lets him last longer, but nothing that gives him an edge like UBW. KoH's main function isn't even stealing weapons, it's to never be truly disarmed. All he has to do open up more gates and simply overwhelm him. Lancelot only has 2 hands and GoB is omnidirectional. And if that still isn't enough, Gil can spam anti-fairy weapons and completely destroy him.
