Generally because killing Bastion takes a small amount of map awareness and general knowledge on hero's abilities. New players don't get it, so they just see him as someone with a massive damage output and a self heal.
I find it weird Bastion has two major problems on the beta.
New players don't know how to fight OR play him. You will see Genji's and Tracers simply run into him and die, and you will see Bastions forgetting they have Recon Configuration.
Bastion is actually pretty strong if you constantly change positions, and is pretty damn useful on defense.

I'll shoot at someone a few times, take their health down by say 1/3rd before they rush away, let someone else take care of them and about 4 seconds later I get a kill. How does this shit work? wanted to point out a couple things
Symmetra's energy shield for the team buff prevents one shots on squishy heroes from snipers
her energy shield + a more "pure" healer class makes it crazy effective to keep everything alive
Her energy pulse goes through all defensive powers except d.va since that absorbs it. Great way to kill shield users and if you can catch people in a tight area it goes though them all dealing massive damage.
her normal energy drain beam is pretty shitty...for 2-3 seconds and then melts everything but tanks instantly. If shes pretty good at bunny hopping whoever she locks onto will probably die no matter what you do.
Also in solo situations where being mobile one should throw a quick turrent when engaging someone as the turrent + your beam work wonders.
Sadly she has a lot of weaknesses to classes that are of the rook/defense variety but she seems like a good counter against some dps classes and good at killing other healer classes.
Well placed turrents on the ceiling and at the rim side of some doors is also pretty fun.
