Because it doesn't rely on external infrastructure. Fleets relying on warp drive can appear anywhere in enemy space and are practically immune to ambushes. Unlike hyperspace which forces people to use specific, well known highways or wormhole tech which is entirely reliant on space stations for travel.
Using warp drives is also far cooler.

Since it's tied to the pops and happiness, it depends on what kind of empire you're running.
If a planet has 15 Ugly Fucks, all the other species on the planet suffer -15% to their happiness. Which is quite a lot.
Not a problem if you're playing as mono-species empire, but tough if you want to diversify your pops.
Then there's also a negative diplomacy modifier.

You don't need to start as the pre-gen UN to start on Earth. You can create a race of parrots and start on Sol if you want.
It's just a choice in the starting system generation. You can pick either Sol, Deneb (which is the home of the "evil" pre-gen humans) or Random.
And none of the pre-gen races really carry over for the game. They're just templates for a quick start. All the races when you play will be randomly generated. Although you can force races you custom create to spawn as AI.
