There are three main RP servers.
Moonguard: They try to downplay that they're the official ERP server and get furious when you point it out. But it's exactly because of the ERPers that their server is the largest of the three and one of the biggest overall in the game at the moment. Tends to be Alliance-heavy.
Wymrest Accord: Their whole tagline is "At least we're not Moonguard." Slightly less people, but they tend to be a bit lighter on the RP there too. Everyone in the Horde is either a Forsaken edgelord, an Orc clan or most commonly, a Blood Elf noble house. Tends to be Horde-heavy.
Emerald Dream: It's an RP-PvP server. The PvP takes priority and it's the last real bastion of WPvP in the entire game. The server has a strong RP crowd though so if you're looking for it, you'll find it in abundance. If you're just there for the PvP, it's easily avoidable.

Blizzard shot any sensible Warcraft lore in the foot early on by making the Burning Legion the big baddies and the instigators of the whole orcs vs humans conflict, which means that any further open conflict between horde and alliance is stupid and a step back in story development since it would only play into the legion's hands (and both factions know that in-universe). Any real war could only be realized by characters behaving erratically idiotic, and since the larger "common enemy" threat is still looming, Blizz just can write in a quick truce whenever they want - both aspects making for pretty shitty story-telling.
The political situation in vanilla was actually pretty interesting and had potential - an uneasy peace underscored by a cold war with clandestine operations and proxy wars (notice how the original battlegrounds didn't have alliance vs horde, but nominally independent sub-factions that were in open conflict). Of course, Blizz can't write for shit and that potentially interesting story direction was quickly abandoned in favor of what basically amounts to a pathetic on-again-off-again relationship, depending on whatever they want to shoehorn into the next expansion/content patch.

This. Emerald dream is the shit. Alliance has more rp from back when I played. Lots of small and medium sized guilds with specific racial and surfaction requirements. Horde had more pvp powerhouse guilds that weren't really RPers, and smaller RP guilds.
But it was fun because if you went to a night elf area, it would be protected by two dozen night elves. The arathi Highlands were guarded by the remnants of arathor, the undead areas were overlooked by an undead guild. There were massive dwarf and gnome guilds that worked together. The world really felt alive because players were actively role playing in their own areas as well as planning attacks on other RP guilds.
Storm wind was where all the special snowflakes and erpers were. Everyone was a bisexual demon hunter ninja from the Uchiha clan. Basically a mini moonguard but they were in the minority and everyone despises them.

MoP and WoD both felt entirely pointless though.
MoP was a side story dealing with Sha and some new evils (besides SOO) and felt like a side story. It felt like one of those episodes of a show where, during a major arc, there is suddenly one episode where they ignore the main threat and go stop some other threat, before resuming the main story in the next episode.
WoD is an ALTERNATE TIMELINE which was pretty much just an excuse to bring back Gul'Dan. We were fighting people that were already long dead, but got brought back because of time travel. Which feels cheap and empty.
