Nintendo fucked up though. It has taken a ridiculous amount of time to finish and due to that, I never bought a Wii U. I know I'm not alone either in having Zelda as a title that literally sells a system to me. Now I'm gonna skip the Wii U and go for the NX for sure.
Unlike most other people though, I'm not so sad about seeing Zelda be the only focus of E3. I mean is it a mistake for Nintendo to go that route? I would definitely say yes, I'm pretty sure people like me are the minority on being fine with what we're getting (Providing it is a meaty as fuck demo).

The Wii U is dead pretty much confirmed dead and has no good games coming until Zelda NEXT year, unless you somehow think Color Splash or #weebshit will be good.
Even then, the Wii U's last game is not a crossgen multiplat. That means that the Wii U will be the first Nintendo home console without it's own Zelda game, and to make it worse the Wii U version will probably be the inferior port.
And to top it all of, Nintendo has such little confidence in their new platform that they're afraid to show it off at the biggest gaming event this side of the planet (even though they promised to last year) despite it being ready for release in less than a year leading many to think that something has gone horribly wrong behind the scenes. Shaping up to maybe be the Wii U 2.0.

As stated in OP, Zelda U will also come out for NX which most definitely will be powerful enough for a game with this art style. Amazing art design and use of colors is really the most important factor here, I'm sure Nintendo will nail it.

Judging from Link's character model I don't care for the art direction of the character models. Environment looks alright. Aside from that it's hard to have any opinion. We know very little aside from a supposedly large world, but big things aren't always fun to explore and the dungeons could turn out in any possible way. All the big flaws were predictable, though, we just didn't WANT to see them. The first trailer already showed there won't be an organic world which already was a must have for a Zelda game in 2011, it was likely the game will have some kind of Mario level select overworld, it will focus on motion controls and have ugly graphics.
Zelda U will literally be Skyrim: Zelda Edition. We know this already. And while I absolutely hate Skyrim, this is exactly what Zelda needs. Zelda has the exact elements that are needed to make up for all the flaws Skyrim has. It basically has the enzyme Bethesda games themselves are missing for this kind of open world design. It has those huge, complex dungeons that make up for the emptiness, unique characters (instead of generic ones) and short but lovely cutscenes.

Everybody that isn't a jaded fuck will tell you that Skyward Sword, for all its flaws, had some genuinely great parts.
Lanayru Desert areas were all extremely good. Shame the forest and mountain areas were utter shit.
The dungeons in Skyward Sword are some of the best in Zelda period. Ancient Cistern, Sandship, and Fire Sanctuary to name a few.
The layers and layers of padding is what really killed Skyward Sword though. That opening section of the game was honestly painful. How long did it take before we even got to the first dungeon? Like 4 fuckings hours or something?
Those long intro sections are fucking garbage and SS is not the only Zelda game guilty of them (just the worst offender).

So, generally speaking, people are exaggerating a lot when it comes to emptiness being bad for open worlds IN GENERAL. An open world is allowed to be somewhat empty, it's OK, it's supposed to emulate freedom, scale and a believable world. It should be atmospheric. Now the trick is to compensate for the emptiness somehow. You can't just put unlimited of assets and obstacles into an open world, it would be a clusterfuck and confuse, no, annoy the player, it would end up becoming a chore, every time you enter the open world, you feel obligated to clearing some shit and you see like 20 different things to clear, it will make your head explode. Saints Row 4 is actually a good example for this.
Zelda makes up for this with its dungeons, this is what WW did, this is what OoT did, this is what Zelda U will do.

I completely and absolutely disagree. Playing OoT as a kid I didn't distinguished dungeons from the world until the temple parts because the first three dungeons are regular places. This gave me a sensation that every part of the game was equally important in terms of the adventure, instead of being a hub with stuff to do before opening dungeons.
I think, if anything, Skyward Sword did the part of being interesting outside of dungeons. I want this in the new game. To be an interesting place to explore, regardless of dungeons.

Zelda games aren't just about dungeons (or at least they shouldn't, specially this next one). A world that is actually interesting, detailed, full of stuff to see and to do, secrets to find and maybe even some towns is just as important as the dungeons, if not much more than them, because they contribute more to the feeling of adventure. With the very first Zelda game, it was mostly the open map that impressed people the most, giving them a sense of vastness, detail and mystery. With this new Zelda, it seems they are trying to give people nowadays the same impression the first Zelda gave, making use of modern technology.

What? Ocarina of Time's field/Lake Hylia is completely empty. Wind Waker was compeltely empty, too. Those games have what I consider "pre-dungeons", those areas where the level design gets denser and more complex without being in the actual dungeon. Of course Zelda U should also have this instead of just putting the dungeon entry somewhere in the middle of nowhere. This would be crap and isn't wat I want. I believe WW did this with like two dungeons but usually also had those "pre-dungeons" like OoT, not always dungeons per se but narrow, dense areas, be it complex villages (gorons, Kakariko) or those falls and tortuous cliffs in front of the zora's domain. In WW you had the islands with friendly NPCs and quests before getting to the actual dungeon.
Of course I also want this from Zelda U. I would argue that SS did something that the Zelda series absolutely needed to experience going through before it could advance further. The exploration aspect of the games prior had been extremely lacking and felt often tacked on in place of proper content and things to do.
SS on the other hand actually felt like you were slowly pushing your way through the world, rather than relying on NPC sidequests or the plot to unlock shit for you, aside from the robots. Having outer-dungeon segments that preceded the actual dungeon was rad as hell. Granted the green hill zone wasn't too fantastic but it wasn't bad either, and the volcanic and desert areas were both wonderful.
The environmental puzzles have always been the series' greatest draw for me, and have been something Aonuma hasn't been too great at in the 3D games until we got Skyward Sword which focused on them almost entirely. It's a huge part of why I rank that game so highly among the 3D entries despite its numerous, glaring flaws that pull me out of the gameplay. The actual game, handholding, harp, and having to flap the remote to use your bird aside, was fantastic. Good puzzles, good level design, didn't feel like you were just running across a field to get to places at all, which was a huge failing of both WW and TP.

Yeah. Some time last year, which is recently when it comes to the Zelda release schedule. It was the HD version and some elements are leaking from my memory, but yes. I still have that very strong impression of WW being the first Zelda I was actually disappointed in, and I played both Phantom Hourglass and Skyward Sword, which, by the way, I liked enough to replay both. Twice.
Off the top of my head, I can think of, in terms of sidequests...
1) the flower trading chain
2) the moon picture thing
3) the picture stuff
4) the necklace thing for the teacher
5) the girl trying to steal from the safe
6) beating all the whirlwind octobeasties
7) watering all the trees
I think there were a couple on the bird island, I'm not sure what I remember from the tree island, and the rest is a blur.
Did the private resort island count as a sidequest or was that mandatory for game completion, or are those not mutually exclusive?
Really though my primary gripes had to do with the incredibly lacklustre overworld, shit-tier dungeons (even if they did improve the companion mechanic from OoT), a lacking number of dungeons, a piss poor selection of songs (two of which see only like, two uses each and one which is basically mandatory every time you want to so much as change direction in the boat and probably saw more use than many actual tools), and the character interactions and story which had SO MUCH POTENTIAL yet fell incredibly flat with not enough appearances from the characters to show any kind of development or build them up past that initial encounter before brainwashing like three of them into their destinies and never seeing two of them ever again.
My impression of WW is "so much potential, wasted".

I didn't call it barren. It's got a surprising amount of shit to find, but it's a little too sparsely placed. I think they could have shrunk the scale of the world a little bit and it would have felt better for it, while keeping everything else the same. Although I still feel put off by the lack of environmental puzzles compared to the N64 games or SS.
TP's dungeons are superb in implementing their signature tools, but a bit lacking when it comes to incorporating any but the most recognizable of previous tools, but again they're too fucking big. They could be reduced by a font size or two and they'd be almost perfect.

I like this too, and expanding on that idea, I like when the worlds of games aren't proportioned for the express purpose of some hero to traipse through and collect the ragamuffins. Obviously that's the virtual goal of the game, but in a fantasy series like LoZ, where the world hasn't been rewrought by a dominant species to suit their purposes like Earth has by humans, I want to feel dwarfed by the beauty and size of the natural occuring world, admire the geometry of mountains, plains, and rivers, and generally be a stranger in a strange land.
This is what I enjoy about these promotional images like the one OP posted, because it looks larger than a typical overworld (and we know this just a portion of it). There's bound to be lots of negative space occupied only by nature and the art style seems lovely enough for this to be enjoyable on it's own. I don't think there's a been a game with so many uniquely drawn environmental resources that they merit attention on their own, but I hope Zelda U will come close.

For some reason I'm not concerned about difficulty too much. Something as brain-dead simple as Hero Mode increasing the damage enemies deal spices up WWHD and TPHD surprisingly, and ALBW's Hero Mode gets nightmarish once you hit Lorule.
Speaking of unrealistic hype, what I would love most is fully customizable difficulty. Like, you can pick whether enemies deal 1x, 2x or 4x damage and you can turn heart, rupee and item drops off independently.
All of this would make heart pieces and money worthwhile and necessary with very simple measures, and it makes the game massively more fun. I know this because once you start actively avoiding item drops in the existing games, you start playing completely differently. For example, when you do this you NEVER hit the rupee limit because you're required to constantly buy supplies from stores.
Why do people praise non-linearty as the be-all end-all best game design? It's fine for some games, but forcing it for the sake of having it seems to happen often and it usually results in shit like Skyrim.

I don't think they were executed poorly at all. Many of them were quite enjoyable. It's just that the sheer frequency and density was a little bit too high. I for one didn't mind that, but I can see how someone who enjoys exploration would probably take issue with that since they'd make it feel very set path.
My issue with exploration though, especially in the 3D Zelda games post N64, is that it feels very... fake. Like there's not ACTUALLY a whole lot of option on where to go sometimes, but it's so wide open that you kind of don't notice that.

The sleeping for night and lack of night flight were big minuses of SS for sure, and this is coming from someone who ranks it fairly highly among the 3D Zeldas. But then again, SS felt like it had some of the most likeable and believable NPCs in a while. Admittedly they didn't move around on a schedule like MM, but they all felt individual and many felt like they had their own lives, their own little bits about themselves that they hid away from other NPCs and so on. Skyloft was a huge ball of secrets and desires when you really take a look at the NPCs.

Skyloft and its NPCs were a legitimately good part of Skyward Sword, I won't disagree with that.
The problem is that all of that shit was focused entirely on one area when it should have been more evenly spread out throughout the overworld to provide it with a more believable liveliness and realism. That so much of it was based around fucking block pushing puzzles. The hovering fan shit in the temple with the giant fan was kind of neat, and the mirror bouncing shit in the temple with the bird was also kind of fun, but then we run into problems like blocks being stuck in the fucking ground and following a set track and taking nearly a minute just to push into its predetermined end of the track.
WW's temples felt like glorified acrobatics courses built around block pushing puzzles than anything actually decent. It didn't feel like you were figuring out puzzles, just seeing them and them being so fucking simple that you IMMEDIATELY understood what to do and it just became a chore when so many of them were PUSHING FUCKING BLOCKS.

It's my understanding that the only reason you couldn't just fly into skyloft like WW was because there were some secrets that required certain tools or progression to access and the bird would make it too simple to bypass some of them, but then again I don't understand why they couldn't have had invisible walls aided by strong gusts of wind or something since you ARE flying.
The lack of night time flying really burnt me though, especially given that we are technically a hero even if we haven't graduated knight academy and we're explicitly shown characters that can and do fly at night.
My ideal version of SS would have had some mini dungeons tucked off to the sides with secret upgrades for some tools, a second town, fluid transition between sky and skyloft, and a gradual night-day system with sleeping only existing to skip the time it would take.

Minish Cap wasn't terribly long, but on the other hand unlike Wind Waker it actually had tons and tons and tons of fucking content. Places to actually go and explore and things to actually fight. Its story pacing was fantastic. I didn't feel much if any inspiration from Wind Waker at all, except in maybe some aspects of the visual aesthetic.
Minish Cap actually felt like a full and satisfying experience to me.

Because you claimed they weren't bad or anything, when they explicitly WERE bad. They were prime example of how NOT to do dungeons.
They weren't dogshit, but they were way below average. It's not simply a matter of being not as strong, they just weren't good. The best compliment I could possibly offer them is that they were painfully mediocre and incredibly boring.
The partner mechanics were the best thing about those dungeons, and literally the only good thing about them, but they didn't make up for the complete lack of decent puzzles. The only dungeon that really wowed me to ANY degree was the one where you took your boat through it, which was so novel a concept that I actually wish SS had some kind of Link + Bird dungeon.
True, TP wasn't so good in the immediately obvious department, but on the other hand it had a more than decent variety of puzzles. Very few rooms felt like something you'd seen before.

MC also had the fucking seashells, which could be used to collect figurines, and you'd best believe I went for 100% on that shit. There was the cucco-wrangling minigame, and the dream combat minigame, and so on.
There were lots of things that I'd hesitate to call sidequests because they're pretty much just a single task or two even though many of them feel pretty optional.

But it doesn't. It has more sidequests, yes, but those sidequests are barebones as hell. A few of which are done alongside the main quest and are nothing more than free rewards with little actual personal involvement, and some of which fit the same grain of "things I'd hesitate call sidequests" that I'd mentioned about MC.
That MC actually has a fucking interconnected world alone gives it way more content than WW does, even if much of it is related to making your way along the path to the main quest, and there are lots of things off to the side along said path that you don't need to do, but can anyways. The great fairies, for instance, or pockets in caves with chests (which I don't actually remember all too many of in WW, although I'm sure they were there), or business scrubs, or rooms in dungeons pretty much dedicated to treasure hoarding, or heart pieces hidden away in the dungeons behind their own dedicated puzzle solutions, and so on.
That the dungeons were actually good dungeons makes you actually DO more stuff in said dungeons, instead of simply running through the motions as with WW.

The definition of side content has a lot of flexibility, and MC and WW focus on different types of side content. Like, almost everything about the actual ocean aspect of WW was significantly improved upon, minus being able to fluidly move from ocean to town waters and from your boat to the dock. There was a greater variety of ocean bosses too, wasn't there? I feel like that's the case.
I also remember enjoying most of PH's dungeon shenanigans, and thoroughly liking the fact that there was riddle and map-based puzzles in the game.

The worst part is that 6 years was the realistic number after SS. No matter the promises, Aonuma or Miyamoto would make sure delays would happen. Then they probably realized that releasing such an expensive game on a failed system was financial suicide.

Everything about the boat was better in PH barring the navigation since to be frank I prefer just having more direct steering control as opposed to plotting a course every time.
Not sure I agree on the islands thing, since most of PH's optional islands were minigames that were all kind of lousy and not particularly fun. I felt like WW's overworld just had more content in it, that's not to say PH's overworld didn't have a good bit of content itself.
PH would have been much better overall if the music wasn't so grating.

PH's biggest flaws were definitely to do with the control scheme gimmick and the hardware limitations making its soundtrack and visuals lacklustre as hell, but the actual game underneath of those I honestly feel is pretty good. Then again, I genuinely enjoy the Temple of the Ocean King and I'm a huge sucker for games where acquiring the MacGuffins actually affect your play quality / play style.
