If you ever do get around to watching it, Shinobu really only starts to get fleshed out in the second season.
By that time most people watch bakemonogatari, then Nisemono then Nekomono: Kuro, and then there is another arc or two in second season then shinobu starts to have real plot relevance.
So watch it when you really have nothing else to watch, because by that point you'll be completely invested.
Also I should mention that while it is a harem, it pretty much always focuses arcs on one girl at a time and every girl has had more than one arc focused on them, in some cases the girls narrate and in others characters who at the outset seem like side characters will narrate an arc.

Maybe it's because I've become more of an obtuse yurifag with time, but I just generally can't stomach harem anymore. I'm ok with normal romance, but the idea of harem just kills off any kind of interest for me.

I would honestly recommend watching the monogatari series in release order, that's the way it was made to be watched, because watching it in chronological spoils some things earlier than they should.
But I'm one of those people who enjoy figuring out how everything connects because quite a few plot points overlap and create for some interesting mysteries so I recommend release order as does most of the fandom, but it's your call.
