Because it was the first truly popular game in a niche of sandbox games that existed for quite a long time. Nothing can replace it outright because nobody has a reason to play anything else when Minecraft already exists (think WoW). Even if I may enjoy other voxel sandbox games more such as Starmade, nothing else in that general genre will ever replace minecraft due to how iconic it has become.
Its going to go down in history alongside shit like Mario and Sonic and there is nothing we can do about it, I'm sure even Notch wishes he had never made it if not for the billions it raked in.

I'm 33 with a kid on the way, and I dug out the ancient lego box left over from when I was a child. I am not afraid to admit I spent about half an hour building a space ship with them, and enjoyed myself.

It's a game that never ends in a good way. By making the point of the game the creation of stable shelter, which can be expanded upon to a ridiculous degree within a single world, rather than fighting and killing the same mobs over and over again, Minecraft never goes completely stale. You play for a few hours here and there, and when you're burned out you shut it off and can come back months later and pick up where you left off without feeling that you've lost track of the plot, because it has no plot.

It's a great game with cozy art and where players are able to simply experiment with their imaginations, while giving them enough "challenge" and variety for it to not stagnate.
