I would recommend getting a camera mod that lets you zoom out or in way more with a little less fog of war. The Henchman AI mod will give you more control over them and make them do less stupid shit too. There's some good graphics mods in this list too.

BG2 is nowhere hard enough that the party members aren't 'viable'. They are for the most part suboptimal, sure, but the game is filled with so many fucking broken items it means nothing. You could make a party full of nothing but 10 strength fighters and still stomp shit after a few hours.

In real 2nd D&D edition elves could only be brought back by the use of Ressurection spell, which was a 9th level divine spell so it not only required a high level priest but also one that is highly favoured by his God.
In BG2 it's only a 7th level spell for the gameplay sake but I guess are still supposed to think that he couldn't be brought back because reasons.

Divine (or Priest) spells in AD&D went up to 7th level, and later they added Quest spells which were specialized spells only granted by the deity for specific situations. Resurrection was a 7th level spell. Jaheira's various reasons for turning down a resurrection (body mutilated/wouldn't want to ask a priest to sacrifice 5 years of their lives for a Wish) were pretty weak.
Khalid was also half-elven, which had no restrictions on resurrection.

The Wall hasn't always existed, so it's not necessary. I think the idea is that if people aren't scared into worship by the threat of the Wall, the gods will lose all their power and die because they have no worshippers. Rather than deciding that it's up to the gods to prevent this from happening by being good enough to earn worshippers, they decided it was easier to just shit on the mortals instead.

They have their strengths though.
Bows are the kings when it comes to pure DPS because of their +1attack/round, but pure DPS is not everything.
On the beginning of the game, a heavy crossbow can one-shot a lot of things with its high damage.
Army scythe with its +1attack/round is basically the same thing as a +1 longbow, so it's good for the most of the game.
Heavy crossbow of Accuracy with its -5 THAC0 is very good against bosses with high AC like Drizzt.
They are also very good when you want to solo the game because you need to kite and can't just stand in one place, so you own't be able to get the most out of bows.
In BG2 Fire Tooth with greater whirlwind is OP as fuck.

What is the better choice between fighter/cleric and ranger/cleric? Multi or dual-class? Multiclass ranger/cleric seems the superior multiclass choice while fighter/cleric is better dual. They even have elaborate cutscenes dedicated to them to introduce them while plenty of other characters blend into the environment.

Wizard of the Coast made Beamdog sign a contract when handling the EE versions, basically saying that they weren't going to alter ANY of the original content and writing when doing the remakes.
This is the reason why most of the BG EE are fine, with only a few characters feeling off place (maybe, and not so much anyway) as stand-alone additions.
Things are different with Siege of Dragonspear though, this is an expansion that supposedly ties between the end of BG1 and the start of BG2 and is entirely out of Beamdog's writing team, their property, so they can do what the fuck they want with it, which ended up having much more cringe-inducing writing, SJW pandering, trans characters and altering of original character's personalities (Viconia, Shar-teel, Safana) to fit the current political "sexual fairness" agenda.
