I had just started the game for the first time, I don't remember picking a difficulty and I only had the one class available. He floats faster than I can run, and my leap/roll didn't help much.
I could beat the smaller jellyfish that came out of nowhere, but he had so much HP.

change the .ini file to unlock shit, its pretty easy to do

Word. You likely had the default difficulty, of normal. I'd suggest starting with easy while you catch the hang of things; you can change difficulty on the character select screen, below where the characters are.
