How about the swamp then. Start, bonfire. A short jog in, bonfire. Around the corner from there, farron wolf with a bonfire. Finish the 3 flames open the door (this is a 10 second jog from bonfire 2), kill 4 enemies another bonfire (likely a 40 second jog from bonfire 2). This bonfire even links back to the previous zone as if it was originally intended to be a shortcut but they said fuck it and tossed down a bonfire anyway.

There is a Katana skill that releases a ki charge stunning enemies around you. Fighting a group of enemies is brutal but they give you a lot options to deal with that. Items are very useful in this game too.

Don't worry, you'll get some strong as fuck axes and spears soon. The strongest weapon in the demo is the Tombo-Kiri spear. The one I have has a base of 258 attack and with my stats that's boosted to 372. By comparison by Ishida Musamune is 317 attack power.

How do I get good? I feel like dying in 2 hits to starting zone area enemies is really excessive. All I've been doing so far is baiting enemies out, waiting for them to swing, then mashing them to death while they're recovering. It's like my first time playing Dark Souls all over again.

Slow and steady progress.
Go as far as you feel comfortable, amass Amrita, come back to Shrine, level up. Rinse and repeat until you get further and further. You'll eventually unlock the shortcut to the coast and then the second shrine.
Equipment makes a HUGE difference.
Body and Ki are the most important fucking stats early on, especially Ki.
Don't feel too bad, this game is both more unforgiving than Dark Souls and more rewarding.

Once you've purchased the Talisman skill, go to a shrine and Ready Jutsu. Press R1 to go over to Onmyo (Magic) and select the slot you want to fill.
Once that's done, it's now in your inventory and you can set it to a shortcut on the Dpad.
My two favorites?
Ninjutsu - Makibishi. These caltrops slow down enemies HARD.
Onmyo - Sloth Talisman. See he above, but even slower.
And yes, the effect stacks and it makes asshole demons like the Ninja Oni more manageable.

The game was originally based on a half-finished Kurosawa script titled "Oni" that his son tidied up and presented to Koei (Shibusawa helped him fine-tune it a little bit and make it more videogame-y). There was also going to be a tie-in film that Kurosawa Jr. was to direct, but this was cancelled in late 2005.
It doesn't look like the game is based on the Kurosawa script anymore sadly, beyond the basic core.
