Soldier of Fortune 1-2 are really fun and have incredible amounts of gore.
The original Unreal is great and has some of the best atmosphere you'll ever find in an fps.

Most of the 32in24 wads (where the mapping community makes 32+ maps in 24 hours) replace the status bar face with that. In some of the wads the map names are based around food. I think 32in24-13.wad was based around Thanksgiving? The most recent one is on movie names.
Also, start emulating the Timesplitters games through Dolphin.
Sauerbraten is a fun little curiosity. Don't think a lot of people play it anymore though.

I know, ubisoft is slowly killing this game.
Heretic is Doom with a high fantasy theme, and Chex Quest is Doom with a cereal theme. Both are worth a shot. Hexen is a switch hunt with a theme that of an 80's metal album cover you could try after those.
From the top of my head, Perfect Dark is also another very much worth playing, either the N64 original or the 360 digital-only port. When you compare it to Goldeneye, the jump in presentation quality and extra functionality is massive.
Timesplitters 2 was a gem for a console shooter.
