Dragonslayer Greatshield legitimately makes this fight a non-issue. 95% lightning resistance with the second highest stability in the game. Just slap on a lightning resist ring, block, and wait patiently for your chance to retaliate without getting caught by his combo.
Every boss in this game is absurdly easy if you just equip yourself properly for their fighting style/damage.

Do you summon right off the bat or do you at least try to solo it at first? I know each to their own and all, but believe me when I tell you that the sense of accomplishment you get when you're able to take down that boss that wrecked you countelss times is something you don't want to miss out on. However, if you don't have much time at your disposal or simply don't really like challenging games, then that's fine as well and I hope you still enjoy the game anyway.

I tried with my main weapon and the greatsword you find in his bossroom, both do almost no damage to him. I last about 25 minutes until I run out of estus and he two shots me.

I never summon until I find the area boss and try it solo mostly before I call for someone. I just finished the abyss watchers yesterday and they were the first boss I made solo. I do like challenging games but I never have that much time and the game is more fun when you co op. I had my best moments with the game when I went co op so far.
And I still enjoy the game. Going to continue now

I don't blame anyone who summons, maybe you just want to see all the content and the sights, maybe you want to experience the game with your friends, for whatever reason, the feature is there and you're free to use it.
However, it -does- make the game easier, there's so much aggro drawing and staggering going on during boss fights with summons that it absolutely trivializes the fight, feel free to summon if that's your kind of fun, but trying to make the argument that it's "just as challenging" is outright denial.
