One of the reasons why mario maker has those limits its because decided to base the entire level geography structure on smb1 thats why the no slopes thing.
With a unified 3d gfx only style you can reduce almost all limitations.
There will still be limitations, but they will be definitely less.

Whatever games you play after that are up to you, I recommend going in order of release. I wouldn't call the remakes improvements, personally, but go with Ultra if you can't find a friend to play Super Star with. Played both. NIDL has prettier sprites because it's newer but the original feels different in a way. Mostly because of the backgrounds and the overall atmosphere of it.
It's hard to explain but you should give it a spin it will be a difference experience compared to NIDL.
