In the ending where you kill the Firekeeper, you're basically going "Nah, fuck that! I want to live!" The world is still doomed, but you're likely be the only guy to survive it and spend an eternity fighting the ass-raping monsters that come out of the Dark.

DaS2 never says anything about permanently curing the mankind from Undead curse, though Vendrick's blessing on the crowns prevents hollowing of your own character (the reasoning behind this or whether it is permanent isn't talked about anywhere). The SotFS ending is just the Bearer of the Curse walking away from the throne, probably after like Aldia and Vendrick realizing that the Flame can never harness the curse forever. What BotC and Aldia do afterwards isn't fleshed out, apart from apparently seeking answers to the cycle.
However since the Unkindled in DaS3 can't hollow naturally people made the assumption BotC cured hollowing, despite it never being mentioned anywhere. Though I don't know what the fuck is up with Unkindled either and how they differ from the regular Undead. Both DaS1 and DaS2 confirmed that hollowing happens because the flame fading causes mankind to return to their original true form. Unkindled also have the same Darksign, which marks them as undead. But if there was already a way to completely prevent hollowing the whole Fires fading dilemma wouldn't make any kind of sense.
Could be just the writers retconning shit, since they also retconned Kaathe's plan (in DaS1 just letting the flame die = hollow lord, whereas in DaS3 usurping the flame = hollow lord). I hope this is not the case and that the DLC will flesh these things out.

I'd argue that the reason that the Champion of Ash doesn't hollow is something to do with the Flame itself weakening. As the Flame grows weaker, the Dark Soul grows stronger etc etc.
You see humans becoming vastly more powerful beings in Dark Souls 3 than in the past games. Just take Wolnir, Aldrich and Yhorm for example. I think it's just par for the course for humans to become naturally more powerful as the fire draws to a close.
