I'll tell you the deep dark secret to enjoying Witcher 3. I don't blame you, I only finished it for the first time about a month ago since I got turned off by it too.
The secret is........ Completely ignore question marks on the map, only do side quests if they sound fun/they haven't gone gray and you want XP (It seems like if they go gray you get absolutely fucking no XP, which is also a moot point because you get about 70% of your total XP from the main story anyway), follow the main story, and look up spoilers on the locations of whatever witcher gear set diagrams you want since those are the best anyway.

So I just replayed TW3 and realized your choices barely mattered at all, I don't know if im imagining things but it felt like TW2 had a more complex story branch-system

There's a bunch of quests just randomly in the wilderness. They're not groundbreaking like the sidequests, but they do make the world feel alive
