That was mainly 1. Other guys at their prime were Artorias, infused with the power of the Abyss, the various demons since 3 states their only weakened after the Bed of Chaos was destroyed and surprisingly Pinwheel, since it just stole Nitos Rite of Kindling. Imagine how pathetic he would have been otherwise.

Aldrich is literally a slug that can't move from place to place on its own. They literally had to move him and stuff him in the Cathedral of the Deep once he assumed that form. Well Seathe had the whole immortality thing going on so there is that. Just because some bosses are looney doesn't mean they are any less dangerous than before. I'd say Seathe is even more dangerous than when the dragon war was fought because he has crystal magic when you fight him.
There are other bosses too that are in there prime in DaS: 4kids, Queelag, Iron Golem, Sif, you can fight Kalameet without the arrow in his wing (albeit in a very cheesy way), and probably some others too

It says very clearly on his robes he was. The royal line was never able to naturally produce an heir worthy of the title until they found a way to produce an heir, which was Lothric. His prayer robes specifically say that he is the son of prophecy and was groomed from birth to be a Lord of Cinder, but this is only after the royal family went through extreme measures to ensure he would be.

In the case of lore not matching the events of DaS, I'm thinking that its just a case of unreliable narrator. Like its been so long that the events are put together by people who would never have known about the true events.
Like one item description says that Big Hat Logan met Seathe. Sure he met Seathe but Seathe blasted his ass and had him locked up. The description seems to imply that Seathe didn't try to kill and lock away Logan but we obviously saw it happen in DaS.
As far as I care, all the events from 1 are absolute truth and everything that suggests something different from what we experienced in 1 is not the entire truth.

The Artorias that the Chosen Undead fights is not using his equipment or regular fighting style, so he is not in the prime he was in while in the Dragon war, regardless of whatever abyss magic is enchanting him.
That said, The first buff looks like the abyss magic is closing in on him and swirling faster until he cries out in response. I think it's trying to kill him, like an aggressive curse.
Even if the dark magic is enchanting him and powering him up in some way, he's probably not at the 100% he would be if he was fighting intelligently.

Once he transitions just run to a wall, dodge the jump, then run the fuck away from the combo. Maybe hit him with some arrows or magic or whatever. Oh, and the animated armor is actually the Nameless King's as it is about his size, uses a different weapon and sheild than Ornstein and well as being a different armor design.

Lots of characters did, this game is basically piggy backing on the few years of nostalgia and fanwankery people had over them all. With DSll you got some hints and relationships toward them, but this game goes full fanservice with Andre, Ornstein, naming optional bosses like Gwyndolin and Priscilla who some players may have never even heard of or seen. Along with NPCs you meet along the way clad in the onion armor.
Watch them come out with a Solaire focused expansion pack next and an even more blatant wankery over Artorias that makes the Abyss Watchers look like a subtle reference in comparison.
