A lot of the armor is quite English looking. Besides, most of medieval Europe was quite similar in architecture. The differences were more north/south than they were to do with the country.

The architecture in the undead burg/ parish is english, so is most of the knight style armor. Anor londo is based off that cathedral in germany but the ones in england are pretty much indentical anyway

"Modern english" refers more to the language's mechanics and vocabulary currently spoken and perceived as the norm. Accent are another thing entirely.
Most of medieval-ish settings choose an RP accent (or queens english) cause it's considered by many to be the original and proper way to speak and sounds quite comprehensible and clear to non-native speakers.

I loved all the souls games (even 2) but 3 is just not fun

The fantasy stuff is pretty much based on western folklore though, more so than nip stuff.
Also, you have to remember that the translation was done by Brits, and they really have a massive influence on how the story goes. Miyazaki even says that they would say things that he'd implement later.
