The worst part about this fight is how RNG based the first phase is.
Sometimes the main boss will be caught is his walking sideways and not attaching you while the first guys spawns.
Sometimes the second guy spawns aggroed to you.
Sometimes the main guy will stunlock the second guy and kill him one combo.
It felt like I was just going through a giant loading screen to get to the second boss. Sometimes that loading screen is 2 minutes long and other times I got unlucky and it took like 10 minutes.

Pretty tough boss battle. Kind of frustrating really.
Couldn't use a slow weapon effectively on him. Mostly because it's hard to both hit him AND dodge the other guys running at you.
Not got any large titanite or anything so I was really limited weapon wise.
I'm only level 33 though. Haven't invested my levels in any health or anything. Just 21 strength, a little endurance, and the rest in equipment load so I can still fast roll. Ended up using my trusty +3 fire longsword instead since I needed to save stamina so I could block and counter.
I'll admit I'm not very good. I ran out of embers so I had to beat him in base form which was tough since he or any other mook could kill me in two hits.

Dancer would've been a cake walk if you weren't fighting in the church, i would've just shot her to death, i pretty much shoot her to death in phase 3, waiting for only the most opportunistic opening to hit her with melee.
also her wake up is huge, you can deal 1/4 of her HP as she switches to phase 2.

She is easy, but her design and presentation is 10/10. Abyss Watchers were just as easy and they were cool, but unfortunately they had no build up for me which made it the same as fighting any other group of knights to me.

Thats pretty much what I did, I stuck as close as possible to that sweet sexy dancer butt, while rolling like crazy until she got to the end of her animation, then shoved my chaos zweihander up her ass and rinse/repeat. She started to enter her second phase and I went to town. It got down to the fucking wire though, I had maybe 10% health left with no estus, I dodge under her strike and did a sweeping attack from the roll killing her.
Felt amazing, havent felt that accomplished since fighting Fume Knight Raime

The fight could have been put together better, but the design and atmosphere was perfect. The combination of the Embered Watcher's slumped stature and weapon posturing before engaging you speaks of a lord who's been fighting copies of himself for a very long time, one after the other, and this new guy walks in and he's seen as just another opponent in a long line of opponents.
You can even see that he's been piling up the corpses during the lulls in his never ending fight.

Here's some tips.
When he does his charge attack, watch out, if he looks like he's about to swing sideways, dodge into it, then pause a bit before rolling away again. If he charges with a thrust move or a swing from below, dodge to your right and fucks him up.
When he jumps and twirl in the air dodge to your left in his direction, nice free hits you can land.
He can be backstabbed, obviously.
