The biggest edge you can give yourself in his second phase is to just have patience. You'll be surprised how easy it is to dodge his attacks if you just stay back. Hit him during obvious openings

Learn how to roll through his attacks and run away the moment you notice another watcher getting up so they fight each other, keeping awareness of the other guys is the key here.
In phase 2 keep on rolling and backstab his ass and hit him until he's on his feet again.

So, there is a dead dragon in the High Wall zone. Its body seems to be releasing ashes. Any time a dragon has ever died its body always turned into energy, and they have hard scales that wouldn't just ash up for no reason. infact, the only thing ashes seem to be synonymous with in DS3 is Undead risen by the bell. They are always releasing ash and cinders.Does that mean the undead curse is now afflicting dragons? Or perhaps there were dragons who linked the flame in ages past?

But the description of the Soul of Lords says that many many people have linked the flame since Gwyn did. That would explain for a start, how the Soul of Cinder is able to use so many different styles of attacks. So then it follows that even if your own Dark souls 1 chosen undead didnt link the flame, someone else came after you and did it just fine.
In that sense, it means that either ending in Das1 can be cannon, but that in the end it doesn't actually matter which one is because no matter what, the end result is the same.
Also h o l y shit I never thought From would be able to pull off a satisfying final boss fight, but fuck me in the ass if Soul of Cinder wasn't everything i'd ever hoped for.

So, it's pretty much confirmed that it will get DLC, and keeping with From tradition, the most important story elements will be in the DLC.
What do you think it will be? Personally I think it's going to be about how the fuck Anor Londo sank into a valley, and how a mountain came up to its side where there was a fucking drop off before.

Soul of cinder is an amalgamation of every champion to link the fire, including Gwyn. Thats why the first phase moveset is so diverse, its cycling between the strengths of various champions (a sorceror, a spearman, a cleric, a pyromancer etc etc)

Profaned capital was built over eleum loyce. In game text mentions them used to worshipping an oracle (alsanna). Irithyl is built over profaned after Yhorm links the fire and it incinerates everything.
As for the shifting landmasses. Theres a quote I can't seem to find, but the High Walls of Lothric are specifically mentioned as appearing and cutting off access to the Undead Settlement.

Some would be scared of the dark and desperately try to create a flame just as the Izalith witches have failed to do. Others would embrace the darkness for what it truly is. However, I still want to question whether the abyss is really what is great for man.

Aldrich was a clergyman with cannibalistic tendencies who foresaw the Age of the Deep Sea. (According to what I've heard, the word "Deep Sea" and Abyss are the same in Japanese, so that could perhaps be a simple mistranslation.)
Anyway, knowing what would happen in the future, Aldrich decided that he'd be the one to rule during the Age of the Deep Sea. Thus, he formed the weird-ass "Deep" cult that spread throughout Lothric. He ate tons of people (Including children, according to Tsorig and Horace's armor sets.) so that he could grow more powerful. Hawkwood says that he ate so many that he fattened up like a pig and eventually softened into sludge.
According to Aldrich's soul, he became "disillusioned" with his throne and decided to eat the next best thing: Gods. That's where Sulyvahn comes into play. Sulyvahn saw the "Profaned Flame" when he was young and went mad. He pretty much became your typical tyrant. Knowing about Aldrich's "taste" for people was a huge advantage for him because he could just feed Aldrich whatever he wants (Presumably whoever Sulyvahn himself doesn't like, too.), and gets a powerful ally out of it, furthering his influence and rule. At the time, the only stopping Sulyvahn was Gwyndolin, the last remaining god in Anor Londo. According to Yorshka, Gwyndolin became ill. It was a perfect time for Sulyvahn to strike, and so he did. He had Aldrich dwell within Anor Londo, and then locked Gwyndolin in there, too. Aldrich ate Gwyndolin alive and had such an incredible orgasm while eating him that he dreamt of Priscilla and conceived a miracle. Crazy shit.
So, yeah, that's what's up with Aldrich. He was a cannibal cult leader who became so powerful that he was made a Lord of Cinder and was then used as a tool by an even more evil dude.
Only thing I don't know very well is the whole "Deep" thing, but that seems to me like they're still talking about the Abyss.

I know this sounds like a broken record but time is twisted and a new timeline is made whenever you die, someone makes a new character or maybe even everytime you rest on a bonfire.
I think you actually fought Smough and Ornstein ind DS1 and Fight a fallen/broken Ornstein in DS2.
In DS3 you find his shit because that's how far he made it in his ideal timeline and that's the one this game takes place in, the one where all the important events and locations are stacked on each other.
I just hope this is the last part and the DLCs clear the whole mess up a little. Otherwise I'm full of shit.
