It's also because we aren't shown any hints on Undyne's end of being attracted to Alphys until the relationship bit starts, and the only foreshadowing on Alphys' behalf before then is if you choose a certain answer in Mettaton's quiz. We hardly see anything about these characters towards each other until it exactly comes up
Also we hardly see Alphys passionate about anything except that one anime, and that's only for like 2 lines in the whole game. The rest of it is her putting herself down. Alphys is far from in a mental state that would work to be in a stable relationship as well.
