You probably won't kill the stand fast enough but after they go back to regular attack mode finish the ghost off with some throwing knives or firebombs. Do the same thing when he summons him again, you can get in like four hits every summon.

Yeah it's really not difficult. I soloed the game in under 20 hours. People complaining never got gud. There are definitely difficult and annoying parts but nothing in the game was anywhere close to Pikachu and Snorlax.
