I thought that JRPG is a description of japanese rpg with specific tropes. They might be different in some things like combat, character customization/if there is any, how lore is told, plot like save that specific world, ect.
But there is some tropes in gameplay that one can point out and say its from Japan or its a JRPG.

That is true. But what makes an RPG and RPG its pretty simple.
STATS effects things, like in a souls game you gotta think about the stats and how you use your souls to make a build and so on.
So its an RPG because a high stats weapon that can be level up will bring more damage if you get you stats up with dex or strength.
That makes Souls games an RPG or specificity an action RPG.
