Go do something else for a while. He's an optional boss. If you want it done badly enough, summon a spellcaster, they do big dick damage against NotGwyn. Or put your summon stone down and help others until you get a feel for the boss, that way you don't lose anything when you die.
You can expect a 3-combo from any boss with a huge ass weapon, followed by a big damage move that can be timed with a roll or blocked if you can afford the chip damage. So time it to that and_______GIT GUD_________
