I don't like how everything looks so clean, at least what I've been seen until now.
Maybe it's because the initial zones are under daylight.
I miss the rust and all the other dirty textures of DeS and DaS. All stones and rocks and walls in DaS 2 and 3 look like polished smoothed clay.

Let's be honest here, most armor sets and good part of the bosses are just fan favorites from DS 1 and 2 coming back
The Art design is 10/10 though

not going to spoil it but after the Catacombs you'll start seeing bosses using familiar move sets.
Don't know if they did it for lore reasons but it's disappointing anyway.
